If you love a GOOD peanut butter cookie, we have a great one you can whip up – we have had some super deals on Peanut Butter lately so perfect time to put it to use!
We love ours SOFT and chewy, thick too – I’m not a fan of thin and crispy! You’ll want to make sure you have these with a glass of milk.. they are absolutely amazing!
As with ALL cookies, I would recommend using a good butter – avoid using margarine, it’s just a poor choice for cooking AND baking. Using butter will always yield better results (and will taste better, too!)
Thick & Chewy Peanut Butter Cookies

Ingredients
- 1/2 C. Butter, Softened
- 1/2 C. Granulated Sugar
- 1/2 C. Brown Sugar
- 1/2. C. Creamy Peanut Butter
- 1 Large Egg
- 1 tsp Vanilla Extract
- 1 1/2 C. Flour
- 1 tsp Baking Soda
Instructions
- Cream butter & sugars in a stand mixer
- Add peanut butter, egg and vanilla - mix well
- Combine the flour, & baking soda - add to the butter mixture and mix just until combined
- Scoop dough onto the silicone lined baking sheets and bake for 10 minutes (just until set!)
- Allow your cookies to cool on the tray for 5-7 minutes before transferring to a wire rack
- Store in an airtight container
