Strawberry Cheesecake Brownie Cups
Brownies and cheesecake – separate, they are pretty incredible things. I don’t know of anyone in particular that doesn’t like at least one (if not both) of them – and put together… what a treat!
Topped with a fresh strawberry, these strawberry cheesecake brownie cups are to-die-for. Perfect to create for a special dessert for Valentine’s Day – perhaps bring to an office party, or even as a treat for family and friends if you do any entertaining. Don’t limit yourself — they really can be made any time you can get a hold of fresh strawberries. ‘
To get started, simply grab a box or two of brownie mix and cream cheese, some fresh strawberries and pull out your food processor.
Prepare your brownies according to the package directions – lightly grease a 12 ct muffin tin and fill up each cup of the greased muffin tin 2/3 of the way with brownie batter. Bake for 22-25 minutes or until a toothpick comes out clean.
Once removed from the oven, immediately grease the bottom of a small glass and push down on the center of each brownie to make a cup. Let those brownies cool while you prepare the strawberry cream cheese frosting/filling. Place the frosting in a piping bag with a frosting tip and pipe onto each brownie cup and garnish with a fresh strawberry.
Keep these Strawberry Cheesecake Brownie Cups in the refrigerator until ready to serve – they are perfect for Valentine’s but really can be made any time of the year (even for a birthday party, or as a summer dessert).
These are always so well received, it might be a wise choice to double or triple the recipe – every time we make and take to church fellowship they are gone faster than I can set them out. Kids LOVE them and they look beautiful when presented on a tray.

Ingredients
- 1 box of brownie mix (incl. required eggs, butter, etc.)
- 1 8 oz. block of cream cheese, room temperature
- 2 1/4 cups confectionary sugar
- Strawberries for puree and garnish
Instructions
- Preheat oven to 350 degrees F. Mix up the brownie ingredients as stated on the box. Spray cooking spray into cups of a cupcake pan.
- Fill the cups 2/3 of the way full with brownie batter. Bake for 22-25 minutes or until a toothpick inserted into the center of one of the cups comes out clean.
- Immediately after removing the pan from the oven, spray the bottom of a small glass with cooking spray and use it to press down the center of each brownie to make the cups.
- Allow the brownies to cool completely before trying to remove them from the pan.
- While the brownies are cooling, make the strawberry cream cheese.
- Roughly chop 6-7 strawberries and place in a food processor. Pulse until the strawberries have broken down into a puree.
- Mix together cream cheese and powdered sugar using the paddle attachment of a standup mixer. As the mixer is on low, add in strawberry puree one teaspoon at a time until desired consistency and flavor is reached.
- Place the frosting in a piping bag with a frosting tip. Pipe the frosting onto each brownie cup and garnish with a fresh strawberry.
- Store the Strawberry Cheesecake Brownie Cups in the refrigerator until ready to serve.
