Many of you are huge egg-lovers……. we are too. If on any random day you ask Dave what his wife eats, he’d shake his head & go “all she does is eat Eggs”. It’s true… this morning I had an Omelets, but I love everything from egg Sandwiches to eggs over easy atop rice…. they are by far my favorite food.
But, the price isn’t always so glorious! I’m not sure about you but if I have to pay $2 for eggs I CRINGE at the grocery store. And last week, I actually skipped buying eggs… and had a mad husband. Which forced me to Target on Sunday night at 8:54 p.. to get a dozen eggs.

You can save yourself some expense on eggs by purchasing them and freezing them – it’s actually very simple. If you have an overabundance of eggs, OR, if you would like to stockpile eggs, you can freeze fresh, clean eggs for later use – get those ice cube trays out.. they will come in handy!
Freezing Whole Eggs: Crack them, and beat them just until blended; freeze in a storage container that seals tighly and label with the date. Once thawed, 3 Tbsp = 1 Whole Egg.
Freezing Whites: Break the eggs & separate, being careful obviously – you don’t want the yolk in the white. Pour into freeze containers, or into an ice cube tray & freeze, then transfer to a container that seals tightly. Once thawed, 2 Tbsp = 1 Whole Egg White.
Freezing Yolks: Yolks thicken when they are frozen…. which makes them impossible to use after they are thawed; therefore, to prevent that beat the yolks together with 1/8 tsp of salt or 1/2 tsp sugar per every 4 eggs. Then freeze in ice cube trays & transfer to a container that seals tightly once frozen. Make sure you label with the number of yolks and the amount of sugar/salt you used so as to prevent more salt from being added if you use them in a recipe. Once thawed, 1 Tbsp = 1 Whole Egg Yolk.
Using the eggs is quite easy – you simply thaw them over night in the fridge. If you are using the whites, let them sit for 20 – 30 min at room temp. they’ll cook better.

Can you use them as scrambled eggs that way? Or are they better just in baking? We eat eggs every day except for 1 day a week when we have pancakes. My kids behave and think much better in school when they have the protien for breakfast. I too cringe at anything over $1 a dozen. I got Egglands Best for .60/ dozen at Safeway last week in their clearance (with my doubled Q) I was EXCITED!!! But we tend to not have enough to stockpile.

Yes you sure can ;) I freeze them and usually end up making scrambled when they thaw. My kids love eggs… eggs on toast, egg burritos, it helps keep my 5 year old more full in the morning versus eating cereal.

Also starting tomorrow at Fry’s they have eggs on sale….Sheryl you probably have that in the matchup but I didn’t see it listed above so I thought I’d mention it. In honor of Arizona’s 100th bday they have buy 1 at $1.70 (today’s price), get one for 26 cents (the price in 1912), so 2 dozen for $1.96!

If you don’t want to freeze your eggs all you have to do is get some mineral oil and smear it all over the egg which seals out the oxygen not put them back in the carton and store in a CooL, Dark place for up to 12 months!!! :)
