Yummy Slow Cooker Tater Tot Casserole – an easy casserole made in the crock pot, so good it’ll become a family favorite that’s kid-friendly, too!
I love a good tater tot casserole. In fact, I grew up eating this very casserole almost every week… not only was it easy to feed a huge gangle of children, it was one of those recipes that my mom would tote to every potluck.
All these years later, my kids love this casserole just as much. Tater tot casserole is one of those meals that everyone loves – am I right? I haven’t ever met a child that spits their tongue out at the dinner table when this casserole is set down.
This casserole can definitely be made in the oven. But what takes this recipe to a new level is that it is done in the crock pot – for a hands free dinner that cooks in an afternoon. I love a good crock pot recipe – mix it, throw it in and forget it! It’s great to come home after a long day and have a meal that’s ready to go in hungry bellies without waiting for the oven to heat up.
Slow Cooker Tater Tot Casserole
This recipe brings together some of the best pantry staples – along with your choice of ground Turkey or ground beef.
- canned corn
- diced tomatoes
- chunky style salsa
- green chiles and taco seasoning mix (I love this homemade Taco seasoning!)
- a can of red enchilada sauce
- frozen tater tots (Walmart has a gigantic bag for just a few dollars!)
- and your favorite shredded cheese – I love cheddar!
Follow the recipe to mix it up, layer in your favorite slow cooker and wait for it to cook while you run errands, go to work for a few hours or just take a nap and relax.

Slow Cooker Tater Tot Casserole
Ingredients
- 1 Tbsp olive oil
- 1 lb ground turkey
- 1/2 C sweet onion, diced
- 15 oz black beans drained and rinsed
- 15 oz corn drained
- 15 oz diced tomatoes
- 1 C chunky style salsa
- 4.5 oz green chiles, chopped drained
- 1 Tbsp taco seasoning mix
- 10 oz mild red enchilada sauce
- 16 oz frozen tater tots
- 2 C shredded cheddar cheese
Instructions
- Heat olive oil in a large skillet over medium high heat. Add onions and sauté for 3-4 minutes or until soft. Then add in ground turkey. Cook until no longer pink. Once done, remove from heat and set to the side.
- In a large bowl, add black beans, corn, salsa, green chilies, tomatoes, taco seasoning, enchilada sauce, and cooked ground turkey. Stir to mix ingredients well.
- Spread half of the tater tots onto the bottom of the slow cooker; top with ground turkey mixture. Layer 1 cup of cheese on top, and finish with remaining tater tots.
- Cover and cook on Low heat for 5-6 hours or High heat for 3-4 hour. Add cheese during the last 30 minutes of cooking time.
