A really great, reliable slow cooker recipe is sometimes a huge relief – especially when you have a busy week and you’re tired as ever.
Even more… if that slow cooker recipe involves bacon, cheddar and the all-time favorite potatoes, then it’s even better – right? I think so.
This recipe is super easy to practically toss in the slow cooker, push a button, and walk away for four (or six) hours. It turns out perfect every time, too. Kids will love it, and it serves as the perfect side dish to Thanksgiving dinner as well (if you are thinking ahead that far!)
Slow Cooker Cheddar Bacon Ranch Potatoes and Corn
This slow cooker recipe comes together easily with basic ingredients:
- diced red potatoes
- slices of bacon (cooked and chopped)
- cheddar cheese
- all-time favorite ranch seasoning (which is really inexpensive to pick up at any market)
- frozen corn
- butter..
- seasoning – salt and pepper
- That is it! Can you believe it’s just that easy?
Spray your slow cooker with cooking spray and then layer the ingredients as directed. If you are planning on making this over a long period of time (say 6 hours), then set the pot on low. If you are in a crunch for time, flip the slow cooker on high and cook for 4 hours.
This comfort food can definitely be eaten as-is (main meal) or, used as a side to a larger meal (say Thanksgiving). It’s super easy, fool-proof and a favorite of all ages.

Slow Cooker Cheddar Bacon Ranch Potatoes and Corn
Ingredients
- 3 lb red potatoes diced
- 1 Tbsp ranch seasoning
- 1 tsp salt
- 1 tsp black pepper
- 4 Tbsp butter thinly sliced
- 12 oz frozen corn
- 6 strips bacon cooked and chopped
- 2 C shredded cheddar jack cheese
Instructions
- Spray the bowl of the slow cooker with nonstick cooking spray and set aside.
- In a large bowl, toss the red potatoes with the ranch seasoning, salt, and pepper.
- Spread half the potatoes in the bottom of the slow cooker.
- Top the potatoes with half the butter, half the corn, half the bacon, and half the shredded cheese in that order.
- Add the remaining potatoes, butter, corn, bacon, and shredded cheese in layers.
- Place the lid on the slow cooker and set to cook on high for 4 hours or low for 6 hours.
