One of the best ways to save on groceries is by eating from the pantry … if you force yourself to create meals based on what you have (without making ANY trips to the store) you would be surprised what you can put together!
We are eating from the pantry for the next TWO weeks… here’s what we have on our menu for THIS week~ we have 4 HUGE Zaycon Chicken Breasts that’ll stretch for the first 3 meals.
We threw some of that Chicken in the Crock Pot and kept back some of the breasts so we could do Honey Garlic Chicken later in the week (which reheats even BETTER the second day!)
Tonight (10/12) – Chicken Noodle Soup, made our own biscuits with THIS sale on yeast at Fry’s
Tomorrow (10/13) – Use the rest of the Chicken, Shred and use it for Buffalo Mac & Cheese with Whole Grain Pasta.. We also picked up THESE Libby’s Veggies at the $.99 store 3/$.99 and are using them for a side.
Wednesday (10/14) – Cube up the other Breasts and make this recipe for Baked Honey Garlic Chicken with White Rice (which we have plenty of), we’ll use up the Carrots we had from Monday night. The best part about this is that we kept ALL the ends of the Organic bread loaves we had last week and we put them in the processor so we don’t have to buy bread crumbs, we can use our own.
Thursday (10/15) – Chicken Salad Tostadas with the Shredded Chicken that is leftover from the dinners Monday & Tuesday… add some Mayo, Celery & Onion and use with the Tostadas from the $.99 store (Guerrero) – paired with Rice. This one is SO amazing for leftovers..
Friday (10/16) – Potato Soup with a Bag of Organic Potatoes we picked up over the weekend, and a bunch of Green Onions. We will pair with cheap Cornbread (9/$.99 from the $.99 store)
AND that should give us plenty of room for at least 2-3 meals of Leftovers for work lunch, too!
ALL of that without stepping into the store. Take advantage of the MobiSave offer on Betty Crocker Cake Mix and make Lava Cake for an after dinner treat for the entire family. If it helps, they sell Jell-O Instant Pudding at the $.99 store, too!
What might work for us may not work for you – we have 4 kids, and although my oldest can hold her own, the smaller kids get full pretty quick.
