I was lucky enough to find HUGE Bags of Organic Raspberries at Bashas that were marked down to $.99 a few days ago – and I got 4 bags… so they are all at home in the freezer. I used 1/2 a bag yesterday to make these because the kids wanted muffins with the NEW Muffin Cups we got at the $.99 store.
These are AMAZING – not only that, they are better with a little fresh whip cream. The crumb topping is just a bonus… great for breakfast!
Raspberry Streusel Muffins

Ingredients
- 2 Large Eggs
- 1/4 C. Applesauce
- 1/4 tsp Vanilla Extract
- 1/4 C. Melted Butter
- 3/4 C. Milk
- 2 C. All Purpose Flour
- 1/2 C. Granulated Sugar
- 1/4 C. Brown Sugar
- 1 tsp Cinnamon
- 1 tsp Ginger
- 1/4 tsp Nutmeg
- 1 Tbsp Baking Powder
- 1 C. Raspberries
Topping
- 1/2 C. Al Purpose Flour
- 1/2 C. Brown Sugar
- 1/4 tsp Cinnamon
- 1/4 tsp Ginger
- 1/8 tsp Nutmeg
- 1/2 Stick Unsalted Butter (Cut into Chunks)
Instructions
- Preheat your oven to 375 and then line the 12 cup muffin pan with cups - put to the side.
- Make the Crumb topping first by cutting the butter into the dry ingredients, set that side in a separate bowl (if you are using a Mixer you will want to have that mixer to make the batter)
- Combine the Milk, Eggs, Vanilla, Applesauce, Butter and Sugar and cream well.
- Add the dry ingredients (Flour, Cinnamon, Nutmeg, Ginger)
- Then add the Baking Powder, just until mixed.
- Fold in the Raspberries.
- Pour into Muffin Cups, and top with the Streusel (Be generous)
- Bake for 18 - 20 minutes, remove and let cool.
