Pumpkin cheesecake, pumpkin bread… pumpkin soup. What’s is there not to love about pumpkin? It might not be fall just yet… but I’m all about incorporating pumpkin right now.
Yep… why wait for fall when we can start busting out the pumpkin now? Go ahead.. I won’t tell!
These Pumpkin Breakfast Pops are the perfect start to any morning. Made with just a few simple ingredients the night before.. they can freeze overnight and be a delicious breakfast in the morning.
Or a snack..
Really though – they are perfect any time during the day.
Pumpkin Breakfast Pops
Who doesn’t love pumpkin?
Making these pumpkin breakfast pops is super easy – think minutes! Mix together the honey (or sugar), pureed pumpkin and plain yogurt until well combined.
Once combined, add to your popsicle mold and give them a tap to allow the mixture to settle in the mold.
Feel free to use your own popsicle molds for these pumpkin breakfast pops. I love this Zoku popsicle mold because it washes up super and is easy to use.
Freeze the pops… and once frozen, enjoy for breakfast, as a snack, or more.
Pumpkin Breakfast Pops
Equipment
- Popsicle Mold
Ingredients
- 1 C yogurt plain
- 3 Tbsp granulated sugar can be replaced with honey
- 1 tsp ground cinnamon
- 1/2 C pumpkin puree
Instructions
- Place yogurt into a bowl and mix well with sugar. If using honey then same process in place of the sugar.
- In another bowl add cinnamon and pumpkin and stir well.
- In a popsicle mold layer in yogurt then pumpkin then more yogurt and more pumpkin.
- Freeze overnight. Once frozen light run the pop under warm water to remove mold.
