Do you have an Instant Pot? If you do, then this is one of the most easy and well loved recipes you will EVER do.
I’m four months into my Instant Pot and love the thing – I’m infatuated with it, I’m not sure what I did before I had it – now that we have one we use it every day. Sometimes multiple times a day.
Sure, I have a regular pressure cooker but this Instant Pot is so much more than that – I can literally walk away from it without a worry in the world.
My kids love rice – rice works with everything literally, it never fails. Not to mention this pot makes this beautiful white, Coconut Rice in 5 minutes (not including the time to come up & release pressure).
I literally dumped this rice in, added a can of coconut milk, water and a smidge of sugar and walked away to fold a load of clothes, put away those clothes, AND load another wash in the machine. I came back to the kitchen with finished rice.
It pairs up perfect with the Orange Chicken we mentioned previously (that cooks in NO time!)

- 1 1/2 C. White Rice
- 1 can 14 oz Coconut Milk
- 1/2 C. Water
- 1 tsp Sugar
- 1/2 tsp Salt
- Combine all ingredients in the Instant Pot - stir to combine.
- Put the lid on the pot - and push Manual, set for 5 minutes at high pressure.
- Let release naturally for 5 minutes then at that point, release the rest of the pressure yourself.
- Fluff with a fork and serve.
