Potatoes – they are a staple in our house, they are so versatile, and they can be used for SO many GREAT recipes.
You can use potatoes for SO many things – we use them most commonly to make Potato Enchiladas (lots of carbs!) – but there are so many other ways to put them to use.
Each year, the U.S. plants more than 1 million acres of potatoes… that’s a LOT of potatoes! It’s the leading vegetable crop in the U.S. – most people eat them Frozen versus Fresh, and Idaho is the TOP Potato Producing State. Some facts about Potatoes…
- A medium potato contains 79% Water, 10% Vitamins/Minerals, 4% Fiber, and 4% Protein
- Fresh potatoes are a great low calorie meal with fiber
- Buying Organic potatoes (although a little more costly) is a wise move .. as they are exposed to lesser chemicals.
