There is nothing that I love more than something that my sweets and a big, juicy beef hamburger.
Just a few days ago when I was at the grocery store, I spotted La Lechera Sweetened Condensed Milk priced 3/$5.00 – just moments later in the next aisle I spotted Kroger Peanut Butter, in the 12 container, for just $1.00 …
Instantly I had a vision for these bars ~ my mom used to make them when we were kids, and they never lasted more than a day. And although I’m trying to cut sweets from my diet, every so often I can make a little wiggle room for a little tiny piece… then cover up the rest and take down the street to my in laws – they will always finish it up for me ;)
It really is so easy. But let me forewarn you .. you WILL need milk in the fridge. And not just a little but quite a bit. Because these bars are really, really sweet.
- 2 C. Quick Cook Oats
- 1 C. All Purpose Flour
- 1 C. Brown Sugar
- 1/2 tsp Baking Soda
- 3/4 C. Butter
- (1) 14 oz can of Sweetened Condensed Milk
- 3/4 C. Peanut Butter
- 1 C. Chocolate Chips
- Preheat your oven to 350, then liberally grease a 9x13 inch baking dish.
- Cut the butter into slices or chunks (you will want to make sure it's cold)
- In a large bowl, beat the Oats, Flour, Brown Sugar, Baking Soda - cut in the butter and mix until crumbly.
- Reserve 1 1/2 C. of the crumbly mixture, and pour the rest in the baking dish - pat evenly.
- Then heat up the peanut butter in the microwave until slightly soft (not melted, just soft).
- Remove from the microwave, and stir in the sweetened condensed milk.
- Pour that filling mixture over the top of the base in the baking dish, and sprinkle with the chocolate chips.
- Then take the reserved crumb mixture and sprinkle it evenly over the top.
- Place in the oven for 30 minutes at 350 - when done, remove, and let cool thoroughly before slicing.
- Cut into 24 bars as they are extremely rich; or, if you opt to use larger bars, serve as a dessert with Cool Whip or ice cream.
