Mashed Potato Cakes were something we ate a lot of when growing up – potatoes came from the garden in the year, and it was relatively inexpensive for my parents to feed all of us kids.
My parents (both) side of the family were from the UK, and these were fairly popular there…. through in Ireland they use a mix of mashed and raw shredded potatoes.
When my parents got married and came to the states my mom made it all the time for us.
Mashed Potato Cakes are basically a mixture of mashed potatoes, flour, egg and seasonings. They are made on the griddle, and they are great to eat for dinner as a main, or alongside a larger dish.
Potatoes are one of the items we keep in our fridge because they are one of the few items my husband can eat ~ plus, we pick up potatoes almost weekly in our CSA bag. If you are buying potatoes in store, make sure you go the extra mile and get Organic Potatoes.
- 4 large Yukon Gold Potatoes, peeled
- 1 egg
- 1/3 C. Flour
- 2-3 Tbsp Milk
- 1 tsp salt (or more to taste)
- 1 Tbsp Butter (Melted)
- Black Pepper to taste
- 1 Tbsp Butter (for the griddle)
- Place the peeled potatoes in the Instant Pot (Pressure cooker) on the trivet, with 1/2 C. Water.
- Put on the lid and hit Manual for 10 minutes.
- Do a manual pressure release and remove the potatoes.
- Place the potatoes in a large bowl and mash.
- Add the egg, flour, salt and milk and mix until well blended.
- Lay a piece of waxed paper on a flat surface, flour lightly and pat out the potato mixture into a thick patty.
- Use a Mason Jar (Pint) to cut patties out easily and transfer to the griddle with a little butter.
- Cook for 3-4 minutes on each side on medium until well browned, flip and cook the other side.
- Optional: Add 1 tsp Onion Powder or your own herbs for greater flavor.
