It’s Lemon season here in Arizona – at least here at our house, we have a TON of lemons. And a neighbor with TONS of lemons. And in-laws with TONS of lemons.
And that means that we have a HUGE plastic tub OF lemons here.
Which means Pound Cake, Lemon Cookies, Fresh Lemonade, Lemon Bars, you name it… we have made it. Even lemons in the garbage disposal … which works SO much better than paying for special disposal cleaning products.
I just love lemons. I love putting Lemons in my water (in fact, it’s the ONLY way I drink water, and I drink about 8 -10 cups per day…) – they are just amazing for your health, too!
Now lemons may not be all that healthy when you mix with sugar and make bars, but because my neighbor gave us a bucket I figured it was the nice thing to do… was to turn around and make him bars with the lemons we scored. He was thrilled and his wife was tickled that my boys brought them over today…
Thankfully they are really EASY to make, too.. . so easy, I did about 3 other things WHILE making them and they still turned out fabulous!
So grab 4-5 lemons and check out this easy recipe for Lemon Bars…
- 1 3/4 C. All Purpose Flour
- 2/3 C. Powdered Sugar (+ extra to sprinkle on the bars)
- 1/4 C. Cornstarch
- 12 Tbsp. Butter (Salted, room temp, cut in 1" pieces) - if using Unsalted, then add 1/2 tsp Salt to the crust recipe
- 4 Large Eggs
- 1 1/3 C. Granulated Sugar
- 3 Tbsp. All Purpose Flour
- 2 tsp. lemon zest (2 large lemons)
- 2/3 C. Lemon Juice, from 4-5 large Lemons
- 1/3 C. Whole Milk (I don't recommend anything less)
- Preheat the oven to 350, put the rack in the middle, and then line an 9x13 baking dish with aluminum foil (no greasing required).
- Stir together the flour, powdered sugar, cornstarch and salt - add the butter and cut with a pastry blender until mixture is coarse meal (or use your mixer)
- Sprinkle into a prepared pan and press evenly as a layer on the bottom.
- Refrigerate 10-15 minutes, then pop in the warm oven at 350 for 20 movies - remove when golden brown.
- Whisk together the filling: Eggs, Sugar, Salt and Flour - then stir in the Zest, Juice and Milk to combine.
- Pour that filling onto the warm crust (make sure it's WARM - right out of the oven!
- Turn down the oven to 325, and bake 18-20 minutes until the filling is form.
- Cool the bars at room temperature, and then sprinkle with powdered sugar.
- Cover & refrigerate leftover bars.
