Healthy Chocolate Fudge Truffles
Place the chocolate chips in a small bowl, and zap at 20 second intervals until melted. Make sure to stir in between. Once melted, stir in the almond butter until well combined.
Add the greek yogurt to the chocolate/almond butter mixture, and stir until incorporated. Quickly cover, and pop in the refrigerator for 2 hours or more, until the mixture is firm enough to roll into balls.
Once firm enough to roll into balls, use a Tablespoon to scoop the batter into clean hands. Roll into balls, then carefully roll in cacao powder** to complete the truffles.
**Note: Don’t have cacao powder? Feel free to use unsweetened cocoa powder.
Once your truffles are completed, store loosely covered in the refrigerator until they are ready to be devoured. These truffles would be the perfect addition to your holiday cookie platter or cookie exchange.
