This has to be one of the BEST Blueberry Coffee Cakes I have made – kids love it, I love it, and hubby went wild!

Blueberry Bundt Cake

An easy, delicious cake overflowing with fresh blueberries.

Ingredients
- 3 C. All Purpose Flour
- 1/2 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1 C. Butter, Soft
- 2 C. Sugar
- 6 Eggs
- 1 C. Sour Cream
- 1 tsp Vanilla
- 2 Trays of Fresh Blueberries
Instructions
- Grease and flour the Bundt Pan generously - and set aside.
- Preheat the oven to 325.
- Use an Electric Mixer and mix the Butter, Sugar, Vanilla and Sour Cream just until blended.
- Add the Eggs, one at a time, and blend until combined.
- Add the Flour, Baking Soda, and Baking Powder, and blend until combined - do not overbeat!
- Fold in the blueberries by hand... keep back 12-15 blueberries.
- Sprinkle the 12-15 blueberries you kept back in the bottom of the Bundt pan, and then pour the rest of the batter on top - smoothing out the batter before you pop in the oven.
- Bake for 1 hour or until a knife inserted into the center comes out clean.
Notes
- The more blueberries the better! This is a relatively large cake - so use 2-3 trays. Once it's done baking, let it it rest, for 30-45 minutes, then gently give it a shake or turn upside down to take out.
- Combine 2 Tbsp of Milk with 1 - 1/2 C. Powdered Sugar, and drizzle on the top.
