Instant Pot Ground Beef with Spicy Tomatillo Sauce is a bold combination of beef and tomatillos that’s amazing on rice, in burritos and more!
It’s that time of the year to see tomatillos in your CSA share. These green tomato look-a-likes are covered in a thin layer of green peel. Under that peel, a sticky sap designed to ward off the most bothersome pests in the garden.
Tomatillos are usually always used to make salsa verde. But sometimes they can be used to make a rich, delicious ground beef for tacos or taco nachos. Yum!
Ground Beef with Spicy Tomatillo Sauce
This recipe is super easy and no fuss. If you don’t have an Instant Pot simply pull out your Dutch Oven. Then let the tomatillos simmer until they are soft and mashable.
A simple potato masher works great to break up the tomatoes and ground beef at the end of the cooking process. Feel free to add your own twist on spices. When finished, the ground beef and tomatillos will simmer in a flavorful broth. Use immediately in tacos, or pile on top of nachos. Top with shredded cheese or serve it up for breakfast.
My favorite way is to eat it in layers — spicy ground beef with tomatillos, sautéed peppers and potatoes, then topped with an egg over easy.

Ground Beef with Spicy Tomatillo Sauce
Ingredients
- 2 Tbsp extra virgin olive oil
- 3 cloves garlic minced
- 1 Tbsp ginger root peeled and chopped
- 1 ea onion sliced
- 1 tsp paprika
- 1.5 tsp chili powder
- 1 lb ground beef
- 7 tomatillos outer shell removed, washed and halved
- 2 green chiles roasted, seeds and membranes removed and finely diced
- 2 ancho chiles dry, stem and seeds removed
- 1/4 C water
- 1 tsp salt or more to taste
Instructions
- Add oil to the Instant Pot, and combine garlic, ginger root, and onion and saute for 1-2 minutes until slightly soft.
- Break up the thawed ground beef and add to the Instant Pot along with the paprika, chili powder, tomatillos, green chile and ancho chiles.
- Break up the ground beef even more with a spatula or spoon as the ingredients blend together on saute for an additional 3-4 minutes, being sure to scrape up the garlic, ginger and spices from the bottom to flavor the ground beef.
- Pour in 1/4 C. water and then place the lid on the Instant Pot, seal the valve, and set the pot for 15 minutes at high pressure (manual).
- Once the pot beeps done, release the pressure, and use a potato masher to mash up any remaining chunks of ground beef, and help break down the tomatillos. Add salt, more or less to taste.
- Give it a good stir and cover with the lid until ready to serve.
Notes
*If you are without an Instant Pot, simply saute the garlic, ginger and onions in your Dutch Oven, then add the ground beef, tomatillos, chile, and spices and increase the water to 1/2 C and allow to simmer, covered, until tomatillos are soft and ground beef is cooked through.
