Do you love Mexican food? We do too ~ in fact, our family is Mexican-American so Mexican food is a pretty big part of our lives.
If it’s one thing I have learned over the years, it’s that Mexican food differs so greatly. Depending on the region of Mexico that you are from, dishes can be made differently – it’s that way with Posole, Albondigas, and even Tamales.
Of course, there is no right or wrong way to make something, but you’ll often times see people comment on Mexican food recipes & say “this isn’t how we made it in our family…”
What constitutes homemade green enchilada sauce in New Mexico might be a little different than how it’s made in Sonora, Mexico – or, Oaxaca, Mexico – just like there are 1,001 ways to make different foods here in the U.S. too :)
These recipes below are ones that are popular in our home. .. we make them often. We hope you love them as much as we do ~ in fact, they might just become part of your permanent recipe rotation!
- Mexican Tamales {Instant Pot Recipe}
- Coricos ~ Mexican Corn Flour Cookies
- Mexican Cauliflower Rice
- How to Make Champurrado (A Thick, Mexican Hot Chocolate)
- Mexican Albondigas Soup
- Instant Pot Shredded Mexican Chicken
- Sweet Potato, Black Bean and Green Chile Empanadas
- Homemade Green Enchilada Sauce
- 30 Minute Instant Pot Chicken Chile Verde
Our favorite thing to make is Champurrado – it’s incredibly amazing when the weather starts to turn a little colder. And although it might not get as cold in Arizona as other places, it’s still worthy of cold weather drinks. And it’s perfect when served with Coricos, too!
Popular items like Piloncillo, and Maseca for some of these recipes can be found at your local Food City, El Super or even Los Altos Market. Some regular grocery stores will also carry these items in the hispanic aisle, too.
