Do you LOVE meatballs? They are delicious – I admit!
We rarely if ever make them and I don’t think we have had any beef in our house for over a year ~ we don’t make too much of a habit of eating meat in general. But just a few weeks ago, we were able to pick up local, grass-fed organic beef from the same farmer that we buy our {Raw} milk and although we just got one single pound from the farm, it was probably the best beef we have ever had.
We truly love this farm in Queen Creek – great people, amazing milk and just an overall care and concern for the people they service – you can’t find that at any grocery store.
Before we go further, we would love to emphasize how important it is to buy local beef – grass fed, pasture raised organic beef is so much better than the beef you get at the grocery store.
If you eat more beef than we do, then buying a cow is essentially a no-brainer – there are many great farmers in the greater Phoenix area.
These meatballs didn’t take long at all to make ~ we actually made 24 medium sized meatballs, and half of them we used in Pasta Sauce over rice (this was a few weeks ago – see that recipe HERE). We made those meatballs in just 5 minutes in our Instant Pot. So for those of you with an Instant Pot, you can make these quite a bit faster there… if you take that route.
Then we took the other half of the dozen, froze them, and baked them for later ~ later was 3 weeks later and between 6 of us, 12 meatballs was plenty. We don’t eat more than 2-3 ourselves, and the kids DID eat them but since they were part of a greater {larger} dinner with baked beans and roasted tomatoes, nobody really needed any more than a few each.
- 1 lb. Grass Fed Organic Ground Beef
- 2 Carrots
- 1/2 Onion
- 1 pc Organic Bread
- 1 large Egg
- 1 tsp Molasses
- 1 tsp Vinegar
- Garlic Salt, Salt and Pepper to taste
- In the food processor, shred the carrot, onion and then bread until shredded/crumbled.
- Put the mixture from the food processor in a bowl, and add the ground beef (thawed).
- Add the egg, and then garlic salt, salt, and pepper - 1/4 - 1/2 tsp should be sufficient.
- Add the molasses and vinegar and mix until well combined.
- Shape into medium size balls and place in a glass 9x13 baking dish.
- Bake at 350 for 20 minutes or until cooked.
