Banana Bread is one of the most amazing comfort foods – actually, we have a few.. Macaroni & Cheese, Potato Soup, and then maybe Banana Bread – not all in that order though.
It could also depend on who you ask and what time you ask them ;)
If you make banana bread around our house, it’s gone in NO time. I actually have to tell them NOT to eat it because they will hover around the baking dish like they haven’t ever had food before… this loaf above, was gone in in a few swipes.
There was one lonely piece left that my 4 year old got a hold of. He set it down to get himself a glass of milk, and my 2 year old picked it up and ran off with it ;) The fighting ensued at that point, with a HUGE tantrum.
If you make yogurt and have leftover whey, this is perfect to put it to use. Whey keeps for around 2 weeks – we usually use it much faster than that though – make a few batches of pancakes to freeze, a few loaves of banana bread (one for a neighbor, one for church to share).. and we might have enough left for a pitcher of lemonade.
But we usually make yogurt once a week so within that time we have replenished it with more to use.
If you don’t have whey, you can use buttermilk – no need to buy it at the store though, just make your own – it’s cheaper & easier.
We did cut back on sugar though, we used slightly less than a full cup.
- 1/2 C. Butter (we don't recommend anything else)
- 1 C. Granulated Sugar
- 1 tsp Cinnamon (or, 2 drops Cinnamon Essential Oil)
- 1 tsp Nutmeg (or, 2 drops Nutmeg Essential Oil)
- 2 Eggs
- 1 1/2 C. day old Bananas
- 1/2 C. Whey (or, use buttermilk instead)
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 2 C. Flour
- Grease a glass loaf pan or baking dish.
- Turn the oven on 350, and preheat.
- Mix up the Butter, Sugar, Eggs, Buttermilk and Bananas until well blended.
- Add the Baking Soda, Baking Powder, Flour, and Cinnamon just until moist.
- Pour into a greased loaf pan or baking dish.
- Bake for 60 minutes or until a knife or, toothpick inserted in the center comes out clean.
The Essential Oils are not required, you can opt to use regular cinnamon and nutmeg in their place. Though we love incorporating them in our baking. We use Young Living and wouldn’t recommend anything else. Read more here.
