If you are looking for a wonderful way to use some extra Cauliflower, this might just be it. If you aren’t up for Cauliflower Soup (which is amazing!) this is relatively easy to make if you have an Instant Pot.
If you don’t have an Instant Pot you can also make it on the stove, though we’re a little infatuated with our pot so any opportunity to use it we’re there.

- 1 Tbsp Coconut Oil
- 1 Onion, diced
- 3 cloves Garlic, minced
- 1 head Cauliflower, cut into florets
- 3 Tbsp yellow Curry Paste
- 14 oz Coconut Milk
- Salt, to taste
- Pepper, to taste
- Optional: Shallots, Cilantro or Green Onions
- In the Instant Pot (or, on the stove), heat the coconut oil and saute the onion and garlic 3-4 minutes.
- Add the Cauliflower and saute until it's soft - another 2-3 minutes.
- Add the curry paste and coconut milk and stir to mix well.
- Bring that mixture to simmer 8-10 minutes, and season with salt and pepper.
- Serve on a plate or in bowls - by itself or, over rice.
- Optional: Garnish with Shallots, Green Onions or Cilantro.
